For the best slow cooker meals, use these tips:
Spray the inside of your slow cooker with cooking spray for easy cleanup.
Recipes using soy protein crumbles absorb liquids, take less time to cook than triditional meat-based recipes and can begin to burn around the edges if cooked longer than time given.
Root vegetables, like potatoes and carrots, take longer to cook than other vegetables, so cut them into smaller pieces and put at the bottom of the cooker.
Use dried herb leaves instead of ground because they keep their flavor better during long cook times
Ground red pepper (cayenne) and red pepper sauce tend to become bitter during long, slow cooking. Use small amounts and taste during hte last hour of cooking to decide whether you need to add more.
A low setting is frequently used because longer cooking times fit well into workday schedules. Fast-forward the cooking time by turning the slow cooker to High for 1 Hour, which equals 2 hours on Low (except for recipes using soy-protein crumbles)
Don't Peek! removing the cover lets heat escape, adding 15 to 20 minutes to the cooking time.
Stir in fresh herbs during the last hour of cooking so they stay flavorful. Some herbs, like oregano and basil lose flavor with an extended cooking time.
Add tender vegetables, like fresh tomatoes, mushrooms and zucchini during the last 30 minutes of cooking so they don't become overcooked and mushy.
Frozen vegetables that have been thawed will keep their bright color and crisp-tender texture by adding them during the last 30 minutes of cooking.
Dairy products like milk, sour cream and cheese tend do curdle. To help prevent curdling, add them during the last 30 minutes of cooking.
Most cooked foods can be held up to an hour on "low" heat setting without overcooking.
For more texture and a little extra flavor, sprinkle slow cooker meals with chopped fresh herbs, grated cheese, crushed croutons or corn chips, chopped tomatoes or sliced green onions just before serving.

I am a big slow cooker fan. Thanks for the tips. I haven't had luck with sweet n' sour or teriyaki sauces in my slow cooker. Everything burns. Is there a trick to using these types of sauces or should I admit defeat and stay away from those meal ideas?

I've been trying to use my slow cooker more this summer (its been so hot, I thought maybe it would help not to use the oven so much). I, too, am bad about lifting the lid but I'm trying to break this bad habit!

I use my crockpot a lot. I didn't know that about cayenne pepper. I'll be watching that from now on.
question about the dairy products... just a few days ago i had put cream of chicken and milk in with all my ingredients and only cooked it for 3hrs... this here http://mommacookscooking.blogspot.com/2008/07/chicken-and-noodles-crockpot-style.html is what I cooked and well i let it cook till the sauce was soaked up by the noodles... i just basically took it from the stove as a cassarole and threw it in the crockpot. and it didn't taste bad. so the milk curdling is that for only cooking it the 6-8hrs not the 3?
I would say it was probably fine. You just have to be careful. When it comes to milk products this is a personal call on what you are comfortable with. For example, I know some people with kids that let them walk around with sippy cups of milk all day.
I love slow cooking. I have a recipe for Chicken fajitas but the onions and peppers come out too limp and the chicken has a different texture. Any suggestions? The flavor is good but my hubby and I are all about texture when it comes to our meals too. It's gotta be a complete package or it's outa here. Love your tips and thanks so much! I'll be back.
